What’s a South Dakota beer law or regulations you’d like to see changed?
As a small craft brewer in South Dakota who does a fair amount of distribution in Watertown, we would love to be able to distribute our own beer. We feel it’s a little ridiculous that we are unable to deliver a keg across the street, or even across town for that matter. Being a small business, this also cuts into our margins as wholesaling beer is far less lucrative then selling retail.

What’s unique about your brewery / beer?
We are located downtown in a 109 year old building that housed three different family owned bakeries until we started renovation in 2014. We have completely revamped the space and turned it into a beautiful taproom/pub with a modern yet rustic industrial atmosphere where we focus on quality beer and fun food. Having a restaurant on site allows us to utilize different parts of the brewing process in our food. We use spent grain to make pizza crust and crackers. We use our beer in many different applications: Beer cheese sauce, beer batter, brines and our pulled beer can chicken.

What local ingredients do you use?
In addition to our brewery/taproom Watertown Brewing Co. operates a small hop yard just north of town. We have roughly 350 plants split between three different varieties: Cascade, Centennial and Chinook. This allows us to produce wet hopped beers in the fall as well as using our own hops in various beers through out the year.

Final thoughts?
Like many brewers out there, Chris is just a lucky home brewer that got to turn pro and share his passion for beer with others. He works tirelessly to brew the best beer possible and loves meeting and introducing new people to craft beer. The feedback and support over our first year of business has been amazing and drives our entire team toward the future.
